Ingredients
2-3 cups flour
2 Tb sugar
1 1/4 tsp salt
1 tsp yeast
1 cup warm water
2 Tb oil
1 1/2 lb roma tomatoes, seeded & chopped
3/4 tsp salt
1/3 cup olive oil
4 garlic cloves, minced
1/2 tsp red pepper flakes, optional
2 cups shredded Mozzarella or Fontina
3/4 cup shredded parmesan
Fresh basil, chopped
1 cup cooked meat of choice
Directions
Put 1 cup flour, sugar, salt and yeast in bowl. Stir in warm water and oil and mix well. Add remaining flour until soft sticky dough is formed: let raise 45 min. Divide into 4-6 portions. Set aside.
Place chopped tomatoes in colander: sprinkle with salt & set aside to drain. In a small saucepan, combine olive oil & garlic. Put on medium/high heat until garlic begins to sizzle. Cook 2 minutes. Add pepper flakes and set aside.
Prepare grill, Coals need to be heating 3/4 of grilling space. Or use your BBQ grill. Roll out dough portions into 9 inch circles. Place dough on grill, 2 at a time. Grill 3-4 minutes or until browned on bottom and bubbles begin to rise to the top. Turn over, Brush top with olive oil; sprinkle on cheese, tomatoes, and meat. Do Not Overload pizza. Cover grill and cook 3-4 minutes or until bottom is crisp and cheese melts. Sprinkle with fresh basil.
Use any toppings you like.
