Ingredients:
2 C quinoa
1 1/2 C crushed tomatoes
1 tsp chili powder
1 tsp cumin powder
1/4 tsp cayenne
1 tsp salt
pepper
1 can black beans, drained
Directions:
Rinse quinoa, add spices and cook on high in 3 C of water. When water comes to a boil, reduce to medium-low heat and simmer until water is absorbed. Fluff with a fork.
Remove from heat and stir in tomatoes and black beans. Can be served right away. Or if you can eat dairy, pour into a baking dish, cover with cheddar cheese and bake at 350 for 20 minutes.
